Lemon Dill Dressing

INGREDIENTS

  • 1 cup water

  • ½ cup extra virgin olive oil

  • ¼ cup lemon juice

  • 3 Tbsp Dijon mustard

  • 2 cloves garlic

  • ¼ tsp xanthan gum (optional)

  • 1 tsp salt-free seasoning

  • 2 tsp dried dill or 2 Tbsp fresh dill

  • Salt to taste

INTRUCTIONS

  1. Add all ingredients into a blender or food processor

  2. Blend on high until thoroughly combined

  3. Store for up to 2 weeks in airtight container in refrigerator

  4. Makes 2 cups
